16 oz. chicken breasts, skinned and boned
4 slices fat-free Swiss cheese
4 thin slices extra lean ham or turkey ham
2 tsp. Dijon mustard
1/2 tsp. Teton Valley Nice n Spicy or Season All
1/4 tsp. garlic herb seasoning
2 egg whites
1/3 cup bread crumbs
2 tsp. diet soft tub margarine
Pepper to taste
Pound chicken between two pieces of plastic wrap until flattened. Spread chicken with mustard then season, placing a slice of ham and cheese on top. Roll up breast and secure ends by pressing together, season again if desired. Dip chicken breast in egg wash then bread crumbs, refrigerate for 1 hour.
In a skillet with margarine, brown chicken breasts until golden brown, about 2 minutes. Transfer chicken to a baking dish. Bake at 350 degrees for 25 minutes.
